Description
This is rather more like a quick snack than an actual meal. With in 15 minutes you can prepare you and your family a nice and healthy snack for those long sunday afternoons.
Have these while watching a great movie and just simply enjoy the food and the companion.
Ingredients
- 1 lb Eggplant
- 1⁄4 lb Flour
- 1 bn Chopped parsley
- 1 clv Garlic
- salt and pepper
- Lemon juice
Instructions
Thouroughly rinse the eggplants and cut them up into 1/4 inch thick slices. Cover them in plenty of flour and place into a previously heated up frying pan.
Once they're done remove and place on top of paper towels or napkins to let these absorb all the excess oil we have on each of these. Now place them in a bowl, sprinkle the chopped parsley on top, chopped garlic cloafs, salt and pepper.
Now depending on the likings of you and your family you can either pour some lemon juice on top or place it on the table for self serving. Lemon juice gives it a nice touch to it but not too many people are fans of it.
