Pumpkin Soup

Description
I've always had a week spot with Pumpkins with those delicious Pumpkin pies. Now after growing up have to a bit more careful on what I eat I've once again have found new and healthier ways to enjoy that delicious pumpkin.
Ingredients
- 1 oz Butter
- 2 lb Freshly diced Pumpkin
- 1 Onion
- 2 Cloves of Garlic
- Salt and Sugar to taste
- 3 c Freshly made Chicken Broth or cube/powder if not possible
- 1 c Milk
Instructions
Place butter and pumpkin in to pan and cook at medium temperature.
When butter has melted, stir to coat pumpkin. Stir until butter has soaked in well into the pumpking dices. Usually 5 - 10 minutes of stirring should do.
Add onion, sugar, salt and chicken broth. Cover and cook for 8-9 hours on Low OR 20 - 25 minutes at medium flame.
When ready to serve, remove the onion.
Puree soup in a blender or use a hand held device.
Add milk, to achieve correct consistency.
Additionaly you can serve with a sprinkling of Nutmeg and a dollop of sour cream.
